This simple recipe with a twist is a wonderful treat any time of the year. Made with a wooden spoon and bowl – no mixer required!

Ingredients:

  • 3-4 ripe bananas smashed (previously frozen and thawed work best)
  • 1/3 cup melted butter
  • 1 cup white sugar
  • 1 egg, beaten
  • 1 tsp vanilla (we use dark Mexican vanilla)
  • 1 tsp baking soda
  • pinch of salt
  • 1 ½ cups flour

Optional (but is it really?):

  • pecan pieces
  • chocolate chips
  • cinnamon sugar mix made to taste

Instructions:

Preheat oven to 350 degrees F.

Grease loaf pan with butter, sprinkle all sides with cinnamon sugar mix. Enough to cover the butter.

In a large mixing bowl, mash bananas with a wooden spoon. Mix in butter.

Mix in egg and vanilla. Add and mix in sugar.

Sprinkle baking soda and salt over mixture. Add your pecans and chocolate chips here. Mix into batter.

Lastly, mix in flour.

Pour into greased loaf pan. Top with more pecan pieces, chocolate chips and a heavy sprinkle of cinnamon sugar.

Bake 60 minutes (give or take) until toothpick comes out cleanly, cool on a cooling rack and enjoy!
