Grandma Lynn’s Chocolate Oatmeal Cookies

I grew up on these cookies and especially loved them ice cold because they sat in the car to eat on the way home from the ski hill.

I’ve altered the recipe over the years, adding more brown sugar than white to my taste. Enjoy!

Ingredients:

  • 1 cup butter
  • ¾ cup white sugar
  • ¾ cup brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1 cup chocolate chips ( i like to mix dark and milk)
  • 1 cup of pecan pieces
  • 1 ¾ cups of oats
  • 1 ½ cups of flour
  • 1 tsp baking powder
  • 1 tsp baking soda

Instructions:

Whip butter and sugars in mixer until smooth and then mix in eggs and vanilla. Beat for at least 1 minute.

Mix flour, powder and soda and slowly add to wet ingredients at low speed until blended.

Remove from mixer and stir in oats thoroughly then mix in chips and pecans.

Roll into balls.  At this stage you can freeze the cookie dough balls and bake fresh whenever the need arises. Place frozen cookie dough on cookie sheet with parchment paper and by the time the oven warms up they are ready to pop in. (eating a frozen cookie dough ball is highly recommended).

Bake cookies at 350 for approx. 8-10 minutes.

Cool before you burn the roof of your mouth on the chocolate!
