Hot Buttered Rum Batter
‘Tis the season to sip warm drinks by the fire. This is great alone with boiling water and cream, or add in your favourite dark rum.
Ingredients:
- 1 cup salted butter – room temp
- 2 cups demerara sugar – lightly packed
- 3 tsp vanilla
- 3 tsp cinnamon
- 2 tsp nutmeg
- 3 tsp clove
Instructions:
Combine all ingredients in a large bowl. Beat together with an electric mixer until creamy. I taste test, then add more spices and vanilla to suit my taste.
Refrigerate in a covered container up to 3 weeks. Can easily be frozen.
Hot Buttered Rum Drink
Place 2 tbsp’s (or to taste) batter mix – room temperature in a large mug. Add 1- 2 oz dark rum (Kraken preferred), top with boiling water and finish with a dash of coffee cream. Stir well and finish with a cinnamon stick and enjoy!
Non-alcoholic version: minus rum, add extra water and cream.
