Don’t throw away your leftover stuffing! This simple frittata is perfect for brunch.

Ingredients

  • oil spray
  • 1 cup diced or chopped ham
  • 2 1/2 cups prepared stuffing
  • 3 whole eggs
  • 3 egg whites
  • 1/4 cup milk
  • 1/4 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 375°.
  2. Spray a baking dish, about 8 x 8 size or a round baking dish, with oil spray.
  3. In a small bowl mix together the ham and stuffing.
  4. Place this evenly in the bottom of the baking dish.
  5. Whisk together the egg whites and whole eggs plus the milk.
  6. Pour evenly over the stuffing mixture.
  7. Top with cheese.
  8. Bake for 25 minutes at 375°.
  9. Serve and enjoy!
